Ingredients

  • 1 cup couscous
  • 1 cup water
  • 2 tablespoons olive oil
  • 1 cup cherry tomatoes
  • 3 units garlic cloves

  • 1 tablespoon lemon juice

Directions

Step 1

Bring 1 cup of water to a boil in a medium saucepan. Add 1/2 teaspoon of salt and 1 tablespoon of olive oil to the water.

Once the water is boiling, remove it from the heat. Add 1 cup of couscous, stir quickly, and cover the saucepan with a lid. Let it sit for 5 minutes to allow the couscous to absorb the water.

While the couscous is resting, heat 1 tablespoon of olive oil in a large skillet over medium heat.
