Ingredients

  • 1 cup Couscous
  • 1.25 cups Water
  • 0.25 cups Pine nuts
  • 2 tablespoons Olive oil

  • 1 tablespoons Lemon juice
  • 2 tablespoons Fresh parsley
  • 2 tablespoons Fresh mint
  • 0.25 teaspoons Ground black pepper

Directions

Step 1

Heat a small skillet over medium heat and add the pine nuts. Toast them gently, stirring frequently, until they are golden brown and fragrant, about 3-4 minutes. Set aside to cool.

In a medium saucepan, bring 1 1/4 cups of water, 1 tablespoon of olive oil, and 1/2 teaspoon of salt to a boil.
