Ingredients

  • 1.5 cups couscous
  • 1.5 cups water
  • 0.5 cups orange juice (freshly squeezed)
  • 2 tablespoons olive oil
  • 1 tablespoon ginger (freshly grated)

  • 0.5 cups almonds (sliced and toasted)
  • 0.25 cups parsley (freshly chopped)
  • 0.25 cups mint (freshly chopped)
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper (freshly ground)

Directions

Step 1

Bring 1.5 cups of water to a boil in a medium saucepan.

Step 2

While the water is heating, add the orange juice, olive oil, salt, and freshly grated ginger to the boiling water. Stir well.

Once the mixture comes to a boil, remove the saucepan from the heat and stir in the couscous.
