  • 1.5 cups couscous
  • 2 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 pound white fish fillet (such as cod or tilapia)
  • 8 ounces smoked sausage
  • 1 large onion, finely chopped
  • 1 medium red bell pepper, diced
  • 3 garlic cloves, minced
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped
  • 1 lemon, cut into wedges

Directions

Step 1

Heat the vegetable broth in a pot until it comes to a boil. Remove from heat and stir in the couscous. Cover and let it sit for 5 minutes. Fluff with a fork and set aside.

Slice the smoked sausage into bite-sized pieces and set aside.

Pat the fish dry with paper towels and cut it into large chunks. Season with a pinch of salt and pepper.
