  • 1.25 cups boiling water
  • 2 tablespoons unsalted butter

  • 1 cup sweet corn kernels (fresh, canned, or frozen)

  • 2 cloves garlic (minced)
  • 2 tablespoons parsley (chopped, fresh)
  • 0.25 teaspoons black pepper
  • 1 tablespoon lemon juice (freshly squeezed)

Directions

Step 1

In a medium saucepan, bring 1.25 cups of water to a boil. Add the butter and salt to the boiling water.

Step 2

Once the water is boiling, remove the saucepan from heat and quickly stir in the couscous. Cover the pan and let it sit for 5 minutes to allow the couscous to absorb the liquid.

While the couscous is resting, heat the olive oil in a skillet over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
