  • 4 pieces chicken thighs (boneless, skinless)

  • 1 teaspoon ground coriander
  • 0.5 teaspoon ground cinnamon
  • 1 14-ounce can canned diced tomatoes
  • 1 15-ounce can canned chickpeas, drained and rinsed
  • 2 cups chicken broth
  • 1.5 cups couscous
  • 0.25 cup parsley, chopped (for garnish)
  • 1 whole lemon wedges (for serving)

Directions

Step 1

Heat 2 tablespoons of olive oil in a large skillet or heavy-bottomed pot over medium-high heat.

Step 2

Season the chicken thighs with 1 teaspoon of salt and 0.5 teaspoon of black pepper. Sear the chicken in the skillet for 3-4 minutes per side, until golden brown. Remove the chicken and set aside.

Step 3

In the same skillet, add the chopped onion and sauté for 4-5 minutes until softened. Add the minced garlic and cook for an additional minute until fragrant.
