Ingredients

  • 2 pieces Chicken breasts
  • 2 tablespoons Olive oil
  • 1 medium-sized Onion
  • 3 pieces Garlic cloves
  • 1 teaspoon Paprika
  • 1 teaspoon Ground cumin
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 cups Chicken stock
  • 1.5 cups Couscous
  • 1 cup Cherry tomatoes
  • 0.25 cup Fresh parsley
  • 2 tablespoons Fresh mint (optional)
  • 1 tablespoon Lemon juice

Directions

Step 1

Cut the chicken breasts into bite-sized pieces and set aside.

Step 2

Finely chop the onion, mince the garlic cloves, and cut the cherry tomatoes in half.

Step 3

Heat 2 tablespoons of olive oil in a large skillet over medium heat.

Step 4

Add the chicken pieces to the skillet, season with 0.5 teaspoon of salt and 0.25 teaspoon of black pepper, and cook for 5-7 minutes until browned on all sides. Remove the chicken from the skillet and set aside.
