Ingredients

  • 1 cup couscous
  • 1.25 cups water
  • 2 tablespoons olive oil
  • 1 bunch asparagus
  • 1 cup snow peas
  • 6 medium radishes
  • 1 teaspoon lemon zest
  • 2 tablespoons lemon juice
  • 2 tablespoons fresh parsley
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Bring 1 1/4 cups of water to a boil in a medium saucepan. Add a pinch of salt and 1 tablespoon of olive oil, then stir in the couscous. Remove the pan from heat, cover, and let the couscous sit for 5 minutes. Fluff with a fork, and set aside.

Step 2

While the couscous is resting, prepare the vegetables: trim the woody ends off the asparagus and cut the spears into 2-inch pieces. Slice the snow peas in half diagonally, and thinly slice the radishes.

Step 3
