Ingredients

  • 1 cup couscous
  • 1 cup vegetable broth
  • 2 tablespoons olive oil
  • 1 tablespoon taco seasoning
  • 1 cup black beans
  • 0.5 cup corn kernels
  • 1 cup cherry tomatoes, halved
  • 0.25 cup red onion, finely diced
  • 2 tablespoons fresh cilantro, chopped
  • 1 whole lime, juiced
  • 8 pieces small taco-sized tortillas
  • 0.5 cup sour cream or Greek yogurt (optional, for topping)
  • 2 teaspoons hot sauce (optional)

Directions

Step 1

In a medium saucepan, bring the vegetable broth to a boil. Remove from heat, add 1 tablespoon of olive oil, and stir in the couscous. Cover and let sit for 5 minutes, then fluff with a fork.

Step 2

In a large skillet over medium heat, add 1 tablespoon of olive oil. Stir in the taco seasoning and heat for 30 seconds to release its aroma.

Step 3

Add the black beans and corn kernels to the skillet. Stir to coat with the seasoning, and cook for 3-4 minutes until heated through. Remove from heat.

Step 4

In a large bowl, combine the cooked couscous, seasoned black beans and corn, cherry tomatoes, red onion, and chopped cilantro. Squeeze in the juice of one lime and toss everything together. Taste and adjust seasoning if necessary.

Step 5

Warm the taco-sized tortillas in a dry skillet or the microwave until soft and pliable.

Step 6

Assemble the tacos by spooning the couscous filling into each tortilla. Top with a dollop of sour cream or Greek yogurt, a drizzle of hot sauce if desired, and extra cilantro for garnish.

Step 7

Serve the couscous tacos immediately and enjoy!
