  • 1 cup couscous
  • 1.5 cups water
  • 3 tablespoons olive oil

  • 1 cup cucumber, diced

  • 0.5 cup feta cheese, crumbled
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

In a medium saucepan, bring 1.5 cups of water to a boil. Stir in 1 cup of couscous and 1 tablespoon of olive oil. Remove from heat, cover, and let sit for 5 minutes. Fluff the couscous with a fork and set aside to cool.

Step 2

In a mixing bowl, combine the cherry tomatoes, cucumber, red onion, and crumbled feta cheese. Add 1 tablespoon of olive oil, 1 tablespoon of lemon juice, 0.5 teaspoon black pepper, and 0.5 teaspoon salt. Mix well and set aside.
