Ingredients

  • 1 cup Couscous
  • 1.25 cups Water
  • 1.5 cups Fresh corn kernels (from 2 ears)
  • 1 cup Cherry tomatoes, halved
  • 1 cup Cucumber, diced
  • 0.5 cup Red bell pepper, diced
  • 0.25 cup Red onion, finely chopped
  • 0.25 cup Fresh parsley, chopped
  • 3 tablespoons Olive oil
  • 2 tablespoons Fresh lemon juice
  • 0.5 teaspoons Ground cumin
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 0.5 cup Feta cheese, crumbled (optional)

Directions

Step 1

Bring the water to a boil in a medium saucepan. Stir in the couscous, cover, and remove from heat. Let it sit for 5 minutes, then fluff with a fork and set aside to cool.

Step 2

While the couscous is cooling, prepare the fresh corn by cooking the kernels in a pot of boiling water for 2-3 minutes, or until tender. Drain and set aside to cool.
