Ingredients

  • 1 cup Couscous
  • 1.25 cups Water
  • 0.5 teaspoon Salt
  • 2 tablespoons Olive oil
  • 0.5 cup Dried cranberries
  • 0.5 cup Pecans
  • 0.25 cup Fresh parsley, chopped
  • 2 pieces Green onions, sliced
  • 2 tablespoons Lemon juice
  • 1 teaspoon Honey
  • 0.25 teaspoon Ground black pepper

Directions

Step 1

In a medium saucepan, bring 1.25 cups of water and 0.5 teaspoon of salt to a boil.

Step 2

Remove the pan from heat and stir in 1 cup of couscous along with 1 tablespoon of olive oil. Cover and let it sit for 5 minutes.

Fluff the couscous with a fork and transfer it to a large mixing bowl to cool to room temperature.

While the couscous is cooling, toast 0.5 cup of pecans in a dry skillet over medium heat for 3-5 minutes until fragrant. Set aside to cool, then roughly chop.
