Ingredients

  • 1 cup couscous
  • 1 cup water
  • 3 tablespoons olive oil

  • 1 cup cherry tomatoes (halved)
  • 1 cup cucumber (diced)
  • 0.25 cup red onion (finely diced)
  • 0.5 cup parsley (chopped)
  • 0.25 cup mint (chopped)
  • 2 tablespoons lemon juice (freshly squeezed)
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper (freshly ground)

Directions

Step 1

Bring 1 cup of water to a boil in a medium saucepan. Add 1 tablespoon of olive oil and 0.25 teaspoons of salt.

Step 2

Remove the saucepan from heat, stir in the couscous, and cover with a lid. Let it sit for 5 minutes to absorb the water.

Step 3

Fluff the couscous with a fork and transfer it to a large mixing bowl. Allow it to cool to room temperature.
