Ingredients

  • 1 cup Couscous
  • 1.25 cups Water
  • 0.5 teaspoons Salt
  • 2 tablespoons Extra-virgin olive oil
  • 2 cups Broccoli florets
  • 0.5 cups Raisins
  • 0.25 cups Red onion, finely chopped
  • 0.25 cups Fresh parsley, chopped
  • 2 tablespoons Lemon juice
  • 0.5 teaspoons Ground cumin
  • 0.25 teaspoons Black pepper

Directions

Step 1

Bring 1.25 cups of water to a boil in a medium saucepan. Add salt and 1 tablespoon of olive oil to the boiling water.

Step 2

Remove the saucepan from heat and stir in the couscous. Cover and let it sit for 5 minutes until the liquid is absorbed.

Step 3

Fluff the couscous with a fork and transfer it to a large mixing bowl to cool slightly.

Step 4

While the couscous is cooling, steam the broccoli florets for 3-4 minutes until they are tender but still crisp. Rinse them under cold water to stop the cooking process and set aside.

Step 5

Add the raisins, red onion, parsley, and steamed broccoli to the couscous in the mixing bowl.

Step 6

In a small bowl, whisk together the remaining 1 tablespoon of olive oil, lemon juice, ground cumin, and black pepper to make the dressing.

Pour the dressing over the couscous mixture and toss everything gently to combine.
