Ingredients

  • 1 cup couscous
  • 1.25 cups water or chicken broth

  • 1.5 cups cherry tomatoes, halved
  • 1 cup green beans, trimmed and blanched
  • 1 can canned tuna, drained
  • 0.5 cup Kalamata olives, pitted and halved
  • 2 whole hard-boiled eggs, peeled and quartered
  • 2 tablespoons fresh parsley, chopped
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper

Directions

Step 1

In a medium saucepan, bring 1.25 cups of water or chicken broth to a boil. Once boiling, remove from heat, stir in the couscous, cover, and let sit for 5 minutes.

Fluff the couscous with a fork and transfer to a large mixing bowl. Allow it to cool slightly.
