Ingredients

  • 1 cup couscous
  • 1.25 cups water
  • 3 tablespoons olive oil
  • 0.5 teaspoons salt
  • 1 cup lima beans (cooked or canned, drained and rinsed)
  • 1 cup cherry tomatoes (halved)
  • 0.25 cup red onion (finely chopped)
  • 0.25 cup parsley (chopped)
  • 2 tablespoons lemon juice (freshly squeezed)
  • 0.25 teaspoons black pepper (freshly ground)
  • 0.25 cup feta cheese (optional, crumbled)

Directions

Step 1

In a medium saucepan, bring 1 1/4 cups of water to a boil. Add 1 tablespoon of olive oil and 1/2 teaspoon of salt.

Step 2

Remove the saucepan from heat, stir in the couscous, cover with a lid, and let it sit for 5 minutes.

Step 3

Fluff the couscous with a fork and transfer it to a large mixing bowl to cool completely.

Step 4

While the couscous is cooling, prepare the other ingredients: halve the cherry tomatoes, finely chop the red onion and parsley, and rinse and drain the cooked lima beans if using canned.

Once the couscous has cooled, add the lima beans, cherry tomatoes, red onion, and parsley to the bowl.

In a small bowl, whisk together the remaining 2 tablespoons of olive oil, 2 tablespoons of lemon juice, and 1/4 teaspoon of black pepper to make the dressing.
