Ingredients

  • 1 cup Couscous
  • 1.25 cups Water

  • 1 can Garbanzo beans (chickpeas), canned and drained
  • 1 cup Cucumber, diced
  • 1 cup Cherry tomatoes, halved
  • 0.25 cup Red onion, finely chopped
  • 0.25 cup Fresh parsley, chopped
  • 0.5 cup Feta cheese, crumbled
  • 3 tablespoons Lemon juice
  • 1 clove Garlic, minced
  • 0.5 teaspoon Ground cumin
  • 0.25 teaspoon Black pepper

Directions

Step 1

In a medium saucepan, bring 1.25 cups of water, 0.25 teaspoon of salt, and 1 tablespoon of olive oil to a boil.

Step 2

Remove the saucepan from heat, stir in 1 cup of couscous, cover, and let it sit for 5 minutes.

Step 3

Fluff the couscous with a fork and let it cool to room temperature while preparing the other ingredients.

In a large mixing bowl, combine 1 can of drained garbanzo beans, 1 cup diced cucumber, 1 cup halved cherry tomatoes, 0.25 cup finely chopped red onion, and 0.25 cup chopped fresh parsley.
