Ingredients

  • 1 cup couscous
  • 1.5 cups water
  • 2 tablespoons olive oil
  • 0.25 teaspoon salt
  • 1 large orange
  • 1 medium apple
  • 0.5 cup dried cranberries
  • 0.5 cup pomegranate seeds
  • 3 tablespoons fresh mint leaves
  • 2 tablespoons lemon juice
  • 1 tablespoon honey
  • 0.25 cup slivered almonds

Directions

Step 1

Bring 1.5 cups of water to a boil in a medium saucepan. Stir in 1 cup of couscous, 2 tablespoons of olive oil, and 0.25 teaspoon of salt. Remove from heat, cover, and let sit for 5 minutes.

Step 2

Fluff the couscous with a fork and set aside to cool to room temperature.

Step 3

Zest and juice the orange, setting aside the zest for later. Peel the orange and cut it into small bite-sized pieces.

Cut the apple into small cubes. If desired, you can toss the apple cubes in a little lemon juice to prevent browning.

Chop 3 tablespoons of fresh mint leaves finely.
