Ingredients

  • 1 cup couscous
  • 1 cup water
  • 0.25 teaspoon salt
  • 1 medium orange
  • 1 medium apple
  • 1 cup grapes
  • 0.5 cup blueberries
  • 0.25 cup almonds
  • 0.25 cup raisins
  • 1 tablespoon honey
  • 1 tablespoon lemon juice
  • 2 tablespoons mint leaves

Directions

Step 1

Bring 1 cup of water to a boil with 0.25 teaspoon of salt in a small saucepan.

Step 2

Remove the saucepan from the heat and stir in 1 cup of couscous. Cover with a lid and let it sit for 5 minutes to absorb the water.

Step 3

While the couscous is resting, peel and segment the orange, dice the apple into small cubes, and halve the grapes. Set these fruits aside in a large mixing bowl along with 0.5 cup of blueberries.

Step 4

Lightly toast 0.25 cup of almonds in a dry skillet over low heat for 2-3 minutes, until fragrant. Add the toasted almonds and 0.25 cup of raisins to the fruit bowl.

Step 5

Fluff the couscous with a fork to separate the grains and let it cool to room temperature.

Step 6

In a small bowl, whisk together 1 tablespoon of honey and 1 tablespoon of lemon juice to create a light citrus dressing.

Step 7

Add the cooled couscous to the mixing bowl with the fruits and nuts. Pour the dressing over the salad and gently toss to combine.

Step 8

Finely chop 2 tablespoons of mint leaves and sprinkle them over the salad for a fresh, vibrant touch.

Step 9

Serve immediately or chill in the refrigerator for 30 minutes for the flavors to meld. Enjoy your Couscous Fruit Salad!
