Ingredients

  • 1 cup Couscous
  • 1 cup Water
  • 2 tablespoons Olive oil
  • 0.5 teaspoons Salt
  • 1 cup Cherry tomatoes
  • 1 medium Cucumber
  • 0.25 cup Red onion
  • 0.5 cup Feta cheese
  • 2 tablespoons Fresh parsley
  • 2 tablespoons Lemon juice
  • 0.25 teaspoons Black pepper

Directions

Step 1

In a medium saucepan, bring 1 cup of water to a boil. Stir in 0.5 teaspoons of salt and 1 tablespoon of olive oil.

Step 2

Remove the saucepan from heat and stir in 1 cup of couscous. Cover the pot and let it sit for 5 minutes to allow the couscous to absorb the water.

Step 3

Fluff the couscous with a fork and let it cool to room temperature while preparing the other ingredients.

Step 4

Halve or quarter 1 cup of cherry tomatoes. Dice 1 medium cucumber into small cubes. Finely chop 0.25 cups of red onion and 2 tablespoons of fresh parsley.

In a large mixing bowl, combine the cooked couscous, cherry tomatoes, cucumber, red onion, feta cheese, and parsley.
