Ingredients

  • 1 cup couscous
  • 1.25 cups water
  • 0.5 cup sun-dried tomatoes (packed in oil)
  • 2 tablespoons extra-virgin olive oil
  • 2 cloves garlic (minced)
  • 0.25 cup fresh parsley (chopped)
  • 0.25 cup fresh basil (chopped)
  • 2 tablespoons lemon juice (freshly squeezed)
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper (freshly ground)
  • 2 tablespoons pine nuts (optional, toasted)

Directions

Step 1

Bring 1.25 cups of water to a boil in a medium saucepan and add 0.5 teaspoons of salt. Remove the saucepan from heat and stir in 1 cup of couscous. Cover with a lid and let the couscous sit for 5 minutes.

Step 2

While the couscous is cooking, chop 0.5 cups of sun-dried tomatoes into small pieces. If they are very oily, pat them dry with a paper towel.

Step 3

Heat 2 tablespoons of extra-virgin olive oil in a small skillet over low heat. Add 2 minced garlic cloves and sauté for about 1-2 minutes, or until fragrant. Be careful not to let the garlic burn.

Step 4

Fluff the couscous with a fork to break up any clumps and transfer it to a large mixing bowl.

Step 5

Add the chopped sun-dried tomatoes, sautéed garlic and oil, 0.25 cups of chopped parsley, and 0.25 cups of chopped basil to the couscous. Toss gently to combine.

Drizzle 2 tablespoons of freshly squeezed lemon juice over the couscous mixture and season with 0.25 teaspoons of freshly ground black pepper. Adjust salt to taste if needed.

If desired, toast 2 tablespoons of pine nuts in a dry skillet over medium heat for 2-3 minutes until golden and aromatic. Add the pine nuts to the couscous mixture for extra flavor.

Step 8
