Ingredients

  • 1 cup couscous
  • 1 cup water
  • 2 tablespoons olive oil
  • 1 cup pomegranate seeds

  • 0.25 cup fresh mint
  • 1 medium cucumber
  • 3 tablespoons lemon juice
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 cup toasted almonds

Directions

Step 1

Heat 1 cup of water in a medium saucepan until it comes to a boil. Remove from heat and stir in 1 cup of couscous along with 1 tablespoon of olive oil. Cover and let sit for 5 minutes.

Fluff the couscous with a fork and let it cool to room temperature.
