Ingredients

  • 1 cup couscous
  • 1 cup boiling water
  • 1 cup feta cheese, crumbled

  • 2 large eggs
  • 0.25 cup fresh parsley, chopped
  • 2 stalks green onions, thinly sliced
  • 1 teaspoon lemon zest
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 3 tablespoons olive oil
  • 0.5 cup plain yogurt (optional, for serving)

Directions

Step 1

Place the couscous in a heatproof bowl. Pour the boiling water over it, cover with a lid or a plate, and let it sit for 5 minutes. Fluff with a fork to separate the grains and allow it to cool slightly.

Step 2

In a large mixing bowl, combine the cooked couscous, crumbled feta, breadcrumbs, eggs, parsley, green onions, lemon zest, salt, and black pepper. Mix well until the ingredients are fully incorporated.

Using your hands, form the mixture into small cakes, about 2–3 inches in diameter and 1 inch thick. You should get 8–10 cakes.
