Wash the zucchinis thoroughly and use a zucchini corer to hollow them out, being careful not to puncture the sides or bottom. Set aside.
Rinse the rice under cold water until the water runs clear, then drain well.
In a mixing bowl, combine the rice, ground meat, 1 teaspoon salt, 0.5 teaspoon black pepper, 0.5 teaspoon cinnamon, 0.5 teaspoon allspice, and chopped fresh mint (if using). Mix well to create the stuffing.
Stuff each hollowed zucchini with the rice and meat mixture, leaving about 1 cm of space at the top to allow the rice to expand during cooking. Do not overfill.
In a large pot, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1-2 minutes.
Stir in the tomato paste and cook for another minute, then add the pureed tomatoes and 3 cups of water or chicken stock. Season the sauce with the remaining 1 teaspoon of salt, 0.5 teaspoon of black pepper, and 0.5 teaspoon of allspice. Bring to a gentle boil.
Carefully place the stuffed zucchinis into the pot, arranging them so they fit snugly. The sauce should cover the zucchinis or come up to at least 3/4 of their height. Add more water or stock if necessary.
Reduce the heat to low, cover the pot, and simmer for about 50-60 minutes, or until the zucchinis are tender and the rice filling is fully cooked.
Gently remove the zucchinis from the sauce and arrange them on a serving platter. Spoon the tomato sauce over the zucchinis.
Serve the Cousa Mashi warm with a side of yogurt or pita bread, if desired.
