Ingredients

  • 1 cup cous cous
  • 1 cup hot water
  • 2 tablespoons olive oil
  • 3 tablespoons lemon juice
  • 1 cup cherry tomatoes
  • 1 medium cucumber
  • 0.5 medium red onion
  • 0.5 cup parsley
  • 0.25 cup mint
  • 0.5 cup feta cheese
  • 0.25 cup pine nuts (optional)
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Place the cous cous in a large, heat-safe bowl.

Step 2

Pour 1 cup of hot water over the cous cous, cover the bowl with a plate or lid, and let it sit for 5 minutes.

Step 3

Fluff the cous cous with a fork to separate the grains and drizzle 1 tablespoon of olive oil over it. Mix gently to coat the cous cous and prevent clumping. Set aside to cool.

Meanwhile, dice the cucumber, chop the cherry tomatoes into halves, and finely dice the red onion.
