Ingredients

  • 2 medium courgette (zucchini)
  • 200 grams cherry tomatoes
  • 6 large eggs
  • 50 ml milk
  • 100 grams goat cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic
  • 5 fresh basil leaves
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Preheat the oven to 180°C (350°F).

Step 2

Wash the courgettes and slice them into thin rounds. Halve the cherry tomatoes. Finely chop the garlic.

Heat 1 tablespoon of olive oil in an ovenproof skillet over medium heat. Add the courgette slices and sauté for 5-7 minutes, until soft and slightly golden.

Add the chopped garlic to the skillet and cook for 1 minute until fragrant.

Stir in the halved cherry tomatoes and cook for another 2-3 minutes. Spread the mixture evenly across the skillet.

In a mixing bowl, whisk together the eggs, milk, salt, and black pepper.

Pour the egg mixture over the courgette and tomatoes in the skillet. Tilt the skillet gently to make sure the egg is evenly distributed.
