Ingredients

  • 500 g courgettes (zucchini)
  • 1 medium onion
  • 2 garlic cloves
  • 30 g unsalted butter
  • 750 ml vegetable stock
  • 10 g fresh basil leaves
  • 50 ml double cream (optional)
  • 1 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper

Directions

Step 1

Wash and trim the courgettes, then slice them into thin rounds.

Peel and finely chop the onion.

Step 3

Mince the garlic cloves.

In a large saucepan, heat the olive oil and butter over medium heat until the butter is melted.

Add the chopped onion and garlic to the pan and sauté for 5-7 minutes until softened and translucent, stirring occasionally.

Add the sliced courgettes to the pan and cook for another 5 minutes, stirring to coat them in the onion and garlic mixture.
