  • 800 grams courgettes (zucchini)
  • 2 tablespoons olive oil
  • 1 medium onion
  • 3 units garlic cloves
  • 400 grams canned chopped tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 250 grams mozzarella cheese
  • 50 grams parmesan cheese (grated)
  • 50 grams breadcrumbs

Directions

Step 1

Preheat your oven to 190°C (375°F). Grease a medium-sized baking dish lightly with olive oil.

Slice the courgettes into thin rounds, about 5mm thick. Set them aside.

Step 3

Heat 2 tablespoons of olive oil in a large frying pan over medium heat. Finely chop the onion and garlic, then sauté them until softened, about 3 minutes.
