Ingredients

  • 2 Courgette (zucchini)
  • 1 cup Fresh sorrel leaves
  • 0.5 cup All-purpose flour
  • 1 Egg
  • 0.5 cup Feta cheese
  • 2 Garlic cloves, minced
  • 2 tablespoons Fresh dill, chopped
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 3 tablespoons Olive oil
  • 0.5 teaspoon Baking powder

Directions

Step 1

Grate the courgettes using a box grater. Place the grated courgettes in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible. Set aside.

Step 2

Finely chop the fresh sorrel leaves and set aside.

Step 3

In a large mixing bowl, combine the grated courgettes, chopped sorrel leaves, minced garlic, feta cheese, and fresh dill.

Step 4

In a separate bowl, whisk together the egg, salt, and black pepper. Add this mixture to the courgette mixture and stir well.

Step 5

Sprinkle the all-purpose flour and baking powder over the courgette mixture. Stir everything together until a thick batter forms.

Step 6

Heat the olive oil in a large skillet over medium heat. Once the oil is hot, use a tablespoon to scoop portions of the batter and drop them into the skillet. Flatten slightly with the back of the spoon to form fritters.

Step 7

Cook the fritters for 3-4 minutes on each side, or until golden brown and cooked through. Avoid overcrowding the pan; cook in batches if necessary.

Step 8

Transfer the cooked fritters to a plate lined with paper towels to drain any excess oil.

Step 9

Serve warm with your favorite dipping sauce or a dollop of plain yogurt.
