Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish and set it aside.
Peel and cube the russet potatoes into 1-inch pieces. Slice the carrots into 1/2-inch rounds. Chop the onion into chunks. Mince the garlic.
