Ingredients

  • 250 grams dates (pitted and chopped)
  • 250 ml hot water
  • 125 grams butter
  • 150 grams brown sugar
  • 50 grams crystallized ginger (finely chopped)
  • 200 grams self-raising flour
  • 2 teaspoons ground ginger
  • 2 eggs
  • 1 teaspoon bicarbonate of soda (baking soda)

Directions

Step 1

Preheat your oven to 180°C (160°C fan-forced) or 350°F. Grease and line a 20cm (8-inch) round cake tin with baking paper.

Step 2

Place the chopped dates in a medium heatproof bowl and add the hot water. Sprinkle the bicarbonate of soda over the dates. Stir and let the mixture sit for 5 minutes to soften the dates.

In a large mixing bowl, cream together the butter and brown sugar until light and fluffy. Use a hand or stand mixer on medium speed for best results.

Add the eggs one at a time to the butter and sugar mixture, beating well after each addition.

Stir in the crystallized ginger, softened date mixture (including the liquid), and ground ginger. Use a spatula or wooden spoon to combine.

Sift the self-raising flour over the wet ingredients. Gently fold the flour into the mixture until fully incorporated. Avoid overmixing to keep the batter light.
