Ingredients

  • 2 tablespoons olive oil
  • 1 medium, diced yellow onion
  • 3 minced garlic cloves
  • 3 medium, peeled and sliced carrots
  • 2 sliced celery stalks
  • 2 medium, diced potatoes
  • 1 medium, sliced zucchini
  • 1 cup, trimmed and halved green beans
  • 4 cups vegetable broth
  • 1 14-ounce can canned diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • 1 teaspoon (adjust to taste) salt
  • 0.5 teaspoon (adjust to taste) ground black pepper
  • 2 tablespoons, chopped (optional for garnish) fresh parsley

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Add the diced onion and sauté for 3-4 minutes, until translucent.

Step 3

Stir in the minced garlic and cook for an additional 1 minute, until fragrant.

Step 4

Add the carrots and celery to the pot, stirring well. Cook for 5 minutes to soften slightly.

Step 5

Add the diced potatoes, zucchini, and green beans to the pot. Stir everything together to combine.

Step 6

Pour in the vegetable broth and canned diced tomatoes (with their juice).

Step 7

Add the dried thyme, dried oregano, bay leaf, salt, and ground black pepper. Stir well.
