Preheat your oven to 325°F (163°C).
In a small bowl, mix together the garlic powder, smoked paprika, salt, and black pepper.
Pat the country-style pork ribs dry with paper towels and drizzle 1 tablespoon of olive oil over them. Rub the spice mixture evenly onto all sides of the ribs.
Place the ribs in a large baking dish or roasting pan, cover tightly with foil, and bake in the oven for 60 minutes.
While the ribs are baking, prepare the potato wedges. Wash and scrub the russet potatoes thoroughly. Cut each potato into 8 wedges.
In a large bowl, toss the potato wedges with olive oil, paprika, garlic powder, dried parsley, salt, and black pepper until evenly coated.
Line a baking sheet with parchment paper or foil. Spread the seasoned potato wedges out in a single layer on the baking sheet.
After the ribs have baked for 60 minutes, increase the oven temperature to 400°F (204°C).
Remove the foil from the ribs and brush them generously with barbecue sauce. Return the ribs to the oven, uncovered, and place the potato wedges on the lower rack.
Bake everything for an additional 30 minutes, flipping the potato wedges halfway through and brushing the ribs with more barbecue sauce if desired.
Check that the ribs are tender and have an internal temperature of at least 145°F (63°C). The potatoes should be golden brown and crispy on the outside.
Remove the ribs and potato wedges from the oven. Let the ribs rest for 5 minutes before serving.
Serve the country-style ribs alongside the potato wedges and enjoy!
