Ingredients

  • 2 lbs Boneless pork loin
  • 2 cups Baby carrots
  • 4 medium Yukon gold potatoes
  • 1 large Yellow onion
  • 3 cloves Minced garlic
  • 1.5 cups Chicken broth
  • 2 tbsp Apple cider vinegar
  • 2 tbsp Brown sugar
  • 1 tsp Paprika
  • 1 tsp Dried thyme
  • 1.5 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Olive oil

Directions

Step 1

Pat the pork loin dry with paper towels and season generously with salt, black pepper, and paprika on all sides.

Step 2

Heat olive oil in a large skillet over medium-high heat. Sear the pork loin for 2-3 minutes on each side, until browned. Transfer the pork loin to the crock pot.

Step 3

Peel and chop the Yukon gold potatoes into large chunks. Slice the yellow onion into thin wedges.

Add the baby carrots, chopped potatoes, and sliced onion around the pork loin in the crock pot.
