Ingredients

  • 3 lbs pork loin roast
  • 2 tsp black pepper
  • 1.5 tsp kosher salt
  • 2 tbsp olive oil
  • 1 large yellow onion, diced
  • 3 stalks celery, diced
  • 3 cloves garlic cloves, minced
  • 6 cups day-old bread, cubed
  • 1.5 cups chicken broth
  • 2 tbsp fresh parsley, chopped
  • 1 tsp dried sage
  • 1 tsp dried thyme
  • 3 tbsp butter, melted

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Season the pork loin roast generously with 2 teaspoons of black pepper and 1.5 teaspoons of kosher salt on all sides.

Step 3

In a large oven-safe skillet or Dutch oven, heat 2 tablespoons of olive oil over medium-high heat. Sear the pork on all sides until golden brown, approximately 3-4 minutes per side.

Step 4

Remove the pork from the skillet and set aside. Don’t clean the skillet; you’ll use the drippings for the stuffing.

Step 5

In the same skillet, add the diced onion, celery, and minced garlic. Sauté for approximately 5 minutes until softened and fragrant.

Step 6

Add the cubed day-old bread into the skillet with the vegetables and stir to combine.

Step 7

Pour in the chicken broth, fresh parsley, dried sage, and dried thyme. Mix everything together to evenly coat the bread.

Step 8

Drizzle the melted butter over the bread mixture and toss to combine, ensuring each piece of bread is well moistened.

Step 9

Push the stuffing to the edges of the skillet, creating a well in the center. Place the seared pork loin in the center, nestling it into the stuffing.

Step 10

Cover the skillet or Dutch oven with a lid (or tightly with foil if using a skillet) and roast in the preheated oven for 60 minutes.

Step 11

Remove the lid or foil and continue cooking for an additional 15-20 minutes, or until the internal temperature of the pork reaches 145°F (63°C).

Step 12

Let the pork rest for 10 minutes before slicing. Serve slices of pork alongside generous scoops of the bread stuffing.

Step 13

Garnish with additional fresh parsley if desired and enjoy your hearty, country-style meal!
