Ingredients

  • 2 pounds ripe tomatoes
  • 1 large yellow onion
  • 1 large green bell pepper
  • 4 pieces garlic cloves
  • 1 cup apple cider vinegar
  • 0.5 cup light brown sugar
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon ground cloves
  • 0.5 teaspoon ground allspice
  • 0.5 teaspoon crushed red pepper flakes
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup water

Directions

Step 1

Wash and core the tomatoes, then roughly chop them into small chunks. Set aside.

Step 2

Peel and finely dice the yellow onion. Remove the seeds and inner membranes of the green bell pepper, then dice it finely.

Step 3

Mince the garlic cloves and set aside.

Step 4

In a large, heavy-bottomed pot or Dutch oven, combine the tomatoes, diced onion, green bell pepper, and garlic.

Step 5

Add the apple cider vinegar and water to the pot, then stir in the light brown sugar, ground cinnamon, ground cloves, ground allspice, crushed red pepper flakes, salt, and black pepper.

Step 6

Place the pot over medium heat and bring the mixture to a gentle boil, stirring occasionally.

Step 7

Once boiling, reduce the heat to low and let the mixture simmer uncovered for 60–90 minutes, stirring occasionally to prevent sticking.

Step 8

As the chili sauce cooks, use a wooden spoon to mash the tomatoes and incorporate the ingredients fully. Alternatively, for a smoother texture, use an immersion blender to puree the mixture directly in the pot.

Step 9

Taste the sauce and adjust seasoning if needed (e.g., more salt or sugar).

Step 10

Once thickened to your desired consistency, remove the pot from heat and let the sauce cool slightly.

Step 11

Transfer the chili sauce into sterilized glass jars or an airtight container. Let it cool completely before refrigerating.

Step 12

Store in the refrigerator for up to 2 weeks or freeze for longer storage.
