Rinse and sort the dried navy beans, removing any debris or damaged beans.
Add the beans to a large bowl and cover with water. Let them soak overnight or for at least 8 hours. Drain and rinse the beans after soaking.
Preheat your oven to 325°F (165°C).
In a large, oven-safe Dutch oven or heavy pot, cook the bacon slices over medium heat until crispy. Remove the bacon and set aside on a paper towel-lined plate. Discard all but 2 tablespoons of the bacon grease.
