  • 2 cups, shredded or sliced cooked chicken or smoked sausage
  • 1 15-ounce can, drained and rinsed cannellini beans
  • 1 bay leaf
  • 1 teaspoon, dried thyme
  • 2 tablespoons, chopped fresh parsley
  • 1 teaspoon, or to taste salt
  • 0.5 teaspoon, or to taste black pepper
  • 2 cups baby spinach
  • 0 for serving (optional) crusty bread

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Add the diced onion and cook for 3-4 minutes until softened.

Step 3

Stir in the minced garlic, carrots, and celery, and cook for another 5 minutes, stirring occasionally.

Step 4

Add the cubed potatoes, canned diced tomatoes (with their juice), chicken broth, cooked chicken or smoked sausage, drained cannellini beans, bay leaf, thyme, salt, and black pepper to the pot.
