Ingredients

  • 1 pound ground breakfast sausage
  • 0.25 cup all-purpose flour
  • 2 cups whole milk
  • 2 tablespoons unsalted butter
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon red pepper flakes (optional)

Directions

Step 1

Heat a large skillet over medium heat. Add the ground breakfast sausage and cook until browned and fully cooked through, breaking it up with a spoon or spatula as it cooks. This should take about 6-7 minutes.

Step 2

Once the sausage is cooked, remove it from the skillet with a slotted spoon and set it aside on a plate. Leave about 2 tablespoons of the rendered fat in the skillet and discard any excess.

Step 3

In the same skillet, melt the butter over medium heat. Once melted, sprinkle the all-purpose flour evenly over the fat and whisk continuously to form a smooth roux. Cook for 1-2 minutes to remove the raw flour taste, but do not let it brown.

Step 4

Gradually pour in the whole milk, whisking constantly to prevent lumps from forming. Continue whisking until the mixture thickens slightly, about 3-4 minutes.

Step 5

Return the cooked sausage to the skillet and stir to combine. Reduce the heat to low and let the gravy simmer for another 2-3 minutes to allow the flavors to meld together. If the gravy becomes too thick, you can thin it out with a splash of milk.

Step 6

Season the gravy with salt, black pepper, and red pepper flakes (if using). Taste and adjust seasoning as needed.

Step 7

Remove the skillet from heat. Serve the hot sausage gravy over warm biscuits, toast, or even hash browns. Enjoy!
