  • 1 cup Cheddar cheese (shredded)
  • 2 pieces Green onions (chopped)

Directions

Step 1

Peel and dice the potatoes into 1/2-inch cubes and set them aside.

Cook the bacon slices in a large pot over medium heat until crispy. Remove the bacon, crumble it, and set it aside. Leave about 2 tablespoons of bacon drippings in the pot.
