Ingredients

  • 4 large Russet potatoes
  • 2 tablespoons Butter
  • 0.5 cup All-purpose flour
  • 2 large Eggs
  • 3 stalks Scallions
  • 2 tablespoons Fresh parsley
  • 1.5 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 0.5 teaspoons Garlic powder
  • 3 tablespoons Vegetable oil

Directions

Step 1

Peel the potatoes and cut them into evenly sized chunks. Place them in a large pot filled with cold, salted water and bring to a boil. Cook for about 10-12 minutes, or until the potatoes are fork-tender.

Drain the potatoes and return them to the hot pot. Mash them thoroughly until smooth. Let them cool slightly for 5 minutes.

While the potatoes are cooling, chop the scallions and parsley finely.
