  • 4 large eggs
  • 2 tablespoons whole milk
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 3 slices bacon
  • 0.5 small yellow onion
  • 0.5 medium bell pepper
  • 0.5 cups shredded cheddar cheese
  • 1 tablespoon butter
  • 1 tablespoon fresh parsley

Directions

Step 1

In a medium-sized bowl, whisk together the eggs, milk, salt, and black pepper until well combined. Set aside.

Cook the bacon in a large nonstick skillet over medium heat until crispy, about 4-5 minutes. Remove the bacon and drain on a paper towel. Once cool, crumble it into small pieces.

While the bacon is cooking, finely chop the onion and bell pepper. Discard the seeds and stem of the bell pepper.
