Ingredients

  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1 cup desiccated coconut
  • 0.75 cup brown sugar
  • 0.5 cup unsalted butter
  • 2 tablespoons golden syrup
  • 2 tablespoons boiling water
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt

Directions

Step 1

Preheat your oven to 325°F (160°C). Line two baking trays with parchment paper and set aside.

Step 2

In a large mixing bowl, combine the rolled oats, all-purpose flour, desiccated coconut, brown sugar, and salt. Mix well.

Step 3

In a small saucepan over low heat, melt the butter and golden syrup together, stirring frequently, until fully combined.

Step 4

Remove the saucepan from heat and add the boiling water. Immediately stir in the baking soda. The mixture will foam up slightly—this is normal.

Step 5

Pour the wet mixture over the dry ingredients and use a wooden spoon to stir everything together until well combined.

Step 6

Scoop tablespoons of the dough and roll them into balls. Place them on the prepared baking trays, leaving at least 2 inches of space between each ball to allow for spreading.

Step 7

Gently press each ball down with the back of a fork to flatten slightly.

Step 8

Bake in the preheated oven for 10–12 minutes, or until the cookies are golden brown around the edges but still slightly soft in the center.

Step 9

Remove from the oven and allow the cookies to cool on the baking trays for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Store the ANZAC biscuits in an airtight container at room temperature for up to 1 week.
