Ingredients

  • 1 pound ground beef
  • 1 cup dry lentils
  • 2 large carrots
  • 2 celery stalks
  • 1 medium yellow onion
  • 3 garlic cloves
  • 14.5 ounces diced tomatoes
  • 4 cups beef broth
  • 2 cups water
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil

Directions

Step 1

Heat a large skillet over medium-high heat and add the olive oil.

Step 2

Add the ground beef to the skillet and cook until browned, breaking it into crumble-sized pieces. Drain off any excess fat and set aside.

Step 3

While the beef cooks, rinse the lentils thoroughly under cold water and set aside.

Step 4

Dice the carrots, celery, and onion into evenly sized pieces. Mince the garlic cloves.

Step 5

In a 6-quart crock pot, combine the browned ground beef, lentils, carrots, celery, onion, and garlic.

Step 6

Add the diced tomatoes (with their juices), beef broth, water, and tomato paste to the crock pot. Stir well to combine.

Step 7

Stir in the dried thyme, oregano, paprika, salt, and pepper for seasoning.

Step 8

Cover the crock pot and cook on low heat for 8 hours or on high heat for 4 hours, until the lentils are tender and the flavors are well melded.

Step 9

Before serving, taste and adjust seasoning with additional salt and pepper if necessary.

Step 10

Ladle the soup into bowls and serve warm with crusty bread or crackers if desired. Enjoy!
