Ingredients

  • 4 cups Green cabbage
  • 4 cups Red cabbage
  • 2 medium Carrots
  • 1 medium Red bell pepper
  • 1 medium Yellow bell pepper
  • 3 stalks Green onions
  • 0.25 cup Fresh parsley
  • 0.25 cup Extra virgin olive oil
  • 3 tablespoons Apple cider vinegar
  • 1 tablespoon Honey
  • 1 teaspoon Dijon mustard
  • 1 clove Garlic
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Thinly slice the green cabbage and red cabbage into shreds. Place in a large mixing bowl.

Step 2

Peel and julienne the carrots into matchstick-size pieces or shred them using a box grater. Add to the bowl with the cabbage.

Step 3

Thinly slice the red bell pepper and yellow bell pepper into strips. Add to the bowl with the other vegetables.

Step 4

Chop the green onions into thin slices, both white and green parts. Add to the bowl.
