Ingredients

  • 4 pieces cube steaks (tenderized beef steaks)
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 cup buttermilk
  • 2 large eggs
  • 0.5 cup vegetable oil
  • 2 tablespoons unsalted butter
  • 2 cups milk
  • 0.5 cup chicken or beef broth

Directions

Step 1

Prepare the seasoned flour by combining 2 cups of all-purpose flour, 1 teaspoon salt, 1 teaspoon black pepper, 1 teaspoon paprika, 1 teaspoon onion powder, and 1 teaspoon garlic powder in a shallow dish. Mix well.

Step 2

In another shallow dish, whisk together 1 cup of buttermilk and 2 large eggs to create the wet mixture.

Step 3

Pat the cube steaks dry with a paper towel. Dip each steak into the flour mixture, shaking off the excess. Then dip it into the buttermilk-egg mixture, allowing the excess to drip off, and return it to the flour mixture for a second coating. Press the flour onto the steaks to create a thick crust. Set aside on a plate.

Step 4

Heat 0.5 cups of vegetable oil in a large skillet over medium heat. Add 2 tablespoons of unsalted butter to the skillet for flavor.

Step 5

Once the oil is hot and shimmering (about 350°F), carefully add the coated steaks. Fry the steaks in batches for 4-5 minutes per side, or until golden brown and crispy. Remove and place them on a paper towel-lined plate to drain excess oil.

Step 6

To prepare the gravy, remove all but 2 tablespoons of the oil from the skillet and leave any crispy bits (fond) in the pan. Add 2 tablespoons of all-purpose flour to the skillet and whisk to create a roux. Cook the roux for about 1-2 minutes until light golden brown.

Step 7

Gradually whisk in 2 cups of milk and 0.5 cups of chicken or beef broth. Continue whisking to prevent lumps and cook until the gravy thickens, about 3-5 minutes. Season with salt and pepper to taste.

Step 8

Serve the country-fried steaks hot, smothered in gravy, alongside mashed potatoes or your favorite side dishes.
