Ingredients

  • 4 pieces cube steaks
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon paprika
  • 1 cup buttermilk
  • 2 pieces large eggs
  • 0.5 cup vegetable oil
  • 3 tablespoons unsalted butter
  • 2.5 cups whole milk
  • 0.5 cup chicken or beef stock
  • 1 tablespoon cornstarch

Directions

Step 1

Pound the cube steaks with a meat mallet to ensure an even thickness, if needed.

Step 2

In a shallow bowl, combine the flour, salt, black pepper, garlic powder, and paprika.

Step 3

In another shallow bowl, whisk together the buttermilk and eggs until well blended.

Step 4

Dredge each cube steak in the flour mixture, then coat in the buttermilk-egg mixture, and dredge it back in the flour mixture. Place the coated steaks on a plate and set aside.

Step 5

Heat the vegetable oil in a large skillet over medium-high heat. Fry each steak for 3-4 minutes per side, or until golden brown and cooked through. Remove the steaks from the skillet and place them on a paper towel-lined plate to drain.

Step 6

Discard all but about 3 tablespoons of oil from the skillet. Add the unsalted butter to the skillet and melt over medium heat.

Step 7

Whisk 3 tablespoons of the reserved flour mixture into the melted butter and oil in the skillet, cooking for 1-2 minutes to form a light roux.

Step 8

Gradually whisk in the milk and chicken or beef stock, ensuring no lumps remain. Bring the mixture to a gentle simmer and continue to cook, stirring frequently, until the gravy thickens to your desired consistency (about 5-7 minutes).

Step 9

If the gravy is too thick, thin it with additional stock or milk. If it’s too thin, dissolve 1 tablespoon of cornstarch in 2 tablespoons of cold water and whisk it into the gravy, cooking until thickened.

Step 10

Taste the gravy and adjust the seasoning with additional salt and pepper, if needed.

Step 11

Serve the fried steaks hot, smothered generously with gravy. Pair the dish with mashed potatoes or steamed vegetables for a complete meal.
