In a shallow bowl, whisk together the flour, cornstarch, baking powder, garlic powder, onion powder, paprika, 1 teaspoon of salt, and 1 teaspoon of black pepper. This is your seasoned flour mixture.
In a second shallow bowl, whisk together the buttermilk, eggs, and 1/2 teaspoon each of salt and black pepper.
Pat the cube steaks dry with paper towels. Dredge each steak in the seasoned flour mixture, shaking off any excess. Then dip it into the buttermilk mixture, ensuring it's fully coated. Return the steak to the flour mixture and thoroughly coat it again, pressing it lightly to adhere.
