Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 3 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 2 tablespoons shallots, finely minced
  • 2 None garlic cloves, minced
  • 2 tablespoons Dijon mustard
  • 0.333 cup dry white wine or chicken stock
  • 0.25 cup heavy cream
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon fresh thyme leaves
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon red pepper flakes (optional)

Directions

Step 1

Rinse the shrimp under cold water and pat them dry with paper towels. Set aside.

Step 2

Heat 1 tablespoon of butter and the olive oil in a large skillet over medium heat until the butter is melted and begins to bubble.

Step 3

Add the minced shallots and garlic to the pan and sauté for 2 minutes, stirring frequently, until fragrant and softened.

Step 4

Add the shrimp to the skillet in a single layer. Cook for 2 minutes on one side, then flip them over and cook for another 1-2 minutes until the shrimp turn pink and opaque. Remove the shrimp from the pan and set aside.

Step 5

To the same skillet, add the Dijon mustard and white wine (or chicken stock). Whisk to combine, scraping up any browned bits from the bottom of the pan.

Step 6

Reduce the heat to low and stir in the heavy cream, lemon juice, fresh thyme, salt, black pepper, and red pepper flakes (if using). Cook for 1-2 minutes until the sauce thickens slightly.

Step 7

Return the cooked shrimp to the pan and toss them gently in the sauce to coat. Cook for 1 additional minute to warm through.

Step 8

Remove the skillet from heat and stir in the remaining 2 tablespoons of butter until melted, creating a silky sauce.

Step 9

Sprinkle the dish with chopped parsley before serving. Enjoy the Country Dijon Shrimp Sauté over rice, pasta, or with crusty bread to soak up the sauce.
