Ingredients

  • 6 large eggs
  • 3 tablespoons whole milk
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 1 large russet potato
  • 8 ounces breakfast sausage
  • 1 small yellow onion
  • 1 medium red bell pepper
  • 1 cup cheddar cheese
  • 2 tablespoons olive oil
  • 2 stalks green onions

Directions

Step 1

Peel and dice the russet potato into small 1/2-inch cubes.

Step 2

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potato and cook for 7-8 minutes, stirring occasionally, until golden brown and cooked through. Transfer to a plate and set aside.

Step 3

While the potatoes cook, dice the yellow onion and red bell pepper. Slice the green onions and set aside for garnish.

Step 4

In the same skillet, add the remaining 1 tablespoon of olive oil. Add the breakfast sausage and break it into smaller pieces with a wooden spoon. Cook for 5-6 minutes until browned and cooked through.

Add the diced yellow onion and red bell pepper to the skillet with the sausage. Cook for 3-4 minutes, stirring frequently, until the vegetables soften.

In a medium bowl, whisk together the eggs, milk, salt, and black pepper until smooth.
